What's also crucial is that the floor is fine finished as even with a good maintenance schedule, if the floor hasn't been 'table-topped', unsightly blemishes wil appear.
On the other hand a fine-finished restaurant floor that has been stained using a good stain/varnish schedule, and is correctly maintained, will wear in an attractive way even as it ages and add to the general ambience of the space.
